  1. Prepare the sauce by mixing almonds, minced garlic, soy sauce, maple syrup, apple cider vinegar, water, sesame oil, chili flakes, and black pepper until smooth.
  2. Prepare all fillings - shrimps, carrot, cucumber, avocado, green onions, mint, lettuce, and bean sprouts.
  3. Soften rice paper wrappers in warm water for 8-10 seconds.
  4. Place a lettuce leaf on the lower third of each wrapper, then add shrimps and other fillings.
  5. Roll tightly halfway, fold in sides, and finish rolling. Repeat for all rolls.
  6. Serve with almond sauce.
