  1. Combine ground meat, breadcrumbs, 1 egg, Pecorino, Parmesan, oregano, parsley, salt, and pepper. Form into 20-30 small meatballs.
  2. In a large soup pot, heat olive oil over medium-high heat. Sauté onions, carrots and garlic until tender.
  3. Add broth and bring to a boil. Add lettuce, reduce heat, and simmer for 10 minutes.
  4. Gently add meatballs to the soup one by one and cook for 5 more minutes.
  5. Whisk 2 eggs with the remaining Pecorino and Parmesan. Slowly stir into the soup until set, about 30 seconds.
  6. Add cooked orzo or couscous if used. Season with salt, black pepper, red pepper flakes, and lemon juice to taste. Serve and enjoy!
